Make Father’s Day extra special with easy-to-make ice cream treats, whipped up by Market of Choice Gracious Kitchen host Mindy Lockard. It’s a great recipe for kids that the whole family will enjoy. Grab your waffle iron and get started!

Ingredients: Bob’s Red Mill Gluten-Free Chocolate Cake Mix
1/3 c vegetable oil
2 eggs
2/3 c milk
1/3 c boiling water
Dad’s favorite ice cream
Dad’s favorite toppings: sprinkles, berries, chocolate sauce and nuts

Instructions: Heat the waffle iron. Pour cake mix into a large bowl. In a separate bowl, lightly beat together eggs, vegetable oil, and milk. Pour mixture into cake mix bowl and add boiling water. Mix well, then carefully pour approx. 1/3 c into waffle iron, being careful not to overfill. Close and allow to cook, according to your waffle iron. Remove waffle from iron and repeat until batter is depleted. Allow waffles to cool completely, approx. 10 min. Cut waffles into quarters. Scoop ice cream onto one ¼ waffle and top with another ¼ to create an ice cream sandwich. Dip the sides of each sandwich into Dad’s favorite toppings. Top with whipped cream, as desired, and serve!
