What is a popover?

Popovers are sweet, light rolls made from egg batter. They get their name from “popping” over of the top of the tin while baking. Originating in the United States, popovers are an American twist on English Yorkshire pudding. Often served with fruit, whipped cream, butter or jam, they can also be enjoyed with a variety of proteins for a savory lunch or dinner.

All you need is a blender, popover or muffin tin, and a few simple ingredients and you’ll be set to make them. The best part? You can double the recipe and store them in an air-tight container to enjoy as a quick, easy breakfast or snack throughout the week! Top them with your favorite ingredients, like berries, lemon juice, powdered sugar, granola, coconut shavings, yogurt, maple syrup or chocolate.

“I like them really simple with just lemon and a little bit of powdered sugar—it’s so delicious,” Mindy says. “But our guests also love a variety of other toppings.”

Gluten Free Popover Recipe

2 T soft butter
8 lg eggs
4 T melted butter
1 ½ Bob’s Red Mill Gluten-Free 1-to-1 Flour
1 ¼ t salt
2 ½ c warm milk
powdered sugar
coconut shavings
maple syrup

1. Preheat oven to 400°
2. Distribute butter into 6 popover cups
3. Place popover cups in oven
4. Crack eggs into a blender
5. Add melted butter, flour, salt and milk
6. Blend until smooth
7. Once butter had melted in popover pan, pour batter ¾ of the way in each cup
8. Return oven and bake 25 min
9. Let cool, then fill with your favorite toppings: berries, lemon juice, powdered sugar, granola, coconut shavings, yogurt, maple syrup, chocolate or your choice of savory proteins, such as ham, sausage, eggs or a combination
