Mindy’s recipe for meatloaf snowmen is a great way to get creative with your kids and get dinner on the table without too much effort. What type of potatoes should I use?
For this recipe, Mindy Lockard’s sister, Becky, suggests Yukon gold potatoes for their creaminess. If you prefer, you can make this recipe with Russet or Red potatoes instead. Like your mashed potatoes with more texture? Simply leave the skins on instead of peeling them.
Can I use my own recipes?
Absolutely! If you have a tried and true way to make mashed potatoes, simply use them to create these cute little snowmen — just be sure to make them smooth for spreadability. You can even use instant potatoes if you want to make them extra easy. Using meatloaf from your Market Meat Dept. reduces prep time, but you can always make your meatloaf using your own recipe, as well.
How do I decorate my snowmen?
Turning the meatloaf cups into snowmen is the best part! Just spread on the mashed potatoes, then use olives to create the mouth and eyes. Finish each snowman with a carrot for the nose. It’s a fun and easy way to get the kids into the kitchen!
Meatloaf Snowmen Recipe
8-10 medium/large or 16 small Yukon gold potatoes
2 c water
½ c butter
¼ c heavy whipping cream
¼ c sour cream
1½ t Lawry’s seasoned salt
1 t garlic salt
2 lb Market of Choice uncooked meatloaf

- Peel potatoes if desired, then quarter.
- Place potatoes and water in a slow cooker on low for 2½ to 3 hours.
- When potatoes are fork-tender, drain water and add butter, heavy whipping cream, sour cream, Lawry’s seasoned salt, garlic salt, salt and pepper.
- Using an electric hand mixer, beat potatoes on low until desired texture. For this recipe, you will want them to be smooth, like snow!
- Preheat oven to 350°.
- Mold meatloaf into 12 large balls and place in each cup of a muffin tin
- Spread ketchup over the top of each cup of meatloaf.
- Cook 25 min or until internal temperature reaches 160°.
- Let meatloaf cool approx. 5 min, then remove from tin.
- Spread mashed potatoes on top of each meatloaf.
- Add olives for the eyes and mouth and a carrot for the nose.
