Sweet and fluffy waffles are delicious, but when you’re craving a savory dish, Mindy Lockard’s hash brown waffles are a wonderful way to wake up. An alternative to traditional waffles but still made with your waffle iron, they are prepared with hash browns, eggs, shredded cheese and ham or bacon. Serve them brunch or enjoy them as a quick and easy breakfast or even dinner. Enjoy them as is, or add your favorite toppings, like hot sauce, ketchup, sour cream, avocado or maple syrup.

Savory Waffles Recipe (Serves 4)

4 c frozen hash browns
4 eggs, beaten or whipped
1 c shredded cheese
3 green onions, chopped
¼ lb ham, thinly sliced or bacon
salt and pepper

Steps for each waffle

  1. Pre-heat waffle iron
  2. Brush waffle iron with olive oil or use cooking spray
  3. Add 1 c hash browns to waffle iron
  4. Add ¼ of egg mixture, coating hash browns (don’t overfill)
  5. Add ¼ c shredded cheese
  6. Add ham or bacon
  7. Top with green onions and season with salt and pepper
  8. Repeat to create three more waffles
